EAT THIS: One Pot Bone-Warming Meals

Oh I love the simplicity of my slow cooker on these long cold winter days!  And if I don’t get something in the slow cooker in the morning, I can still easily whip up a one pot bone-warming meal. These recipes are straight from the recipe section in our food journaling tool, Genesis.

Buffalo Chili
A very meaty chili that is quite satisfying.
INGREDIENTS:

1 cup – BELL PEPPER, GREEN, RAW, CHOPPED
1.5 pound – BISON, GROUND, RAW (BUFFALO)
1.5 cup – CELERY, CHOPPED
1 tbsp – COCONUT OIL
2 EACH – GARLIC, CLOVE
0.5 cup – ONIONS, RAW, CHOPPED
1.5 cup – SALSA, ORGANIC, EMERALD VALLEY
14.5 ounce – TOMATOES, CND, NO SALT ADDED
 In large skillet, melt oil and saute onions, garlic (minced) , celery (chopped), and green pepper (chopped) until onion is translucent. Add ground meat, 2 tsp thyme, 2 tsp chili powder, and 2 tsp ground cumin and cook, stirring frequently, 5-6 minutes. Add tomatoes and salsa. Cover, reduce heat, and simmer for a minimum of an hour. Can also throw it all in the crockpot on low for quite a few hours.
Shrimp Fra Diavolo
Fast, easy, and spicy – great over rice, or grated zucchini (as a pasta substitute!) or as is with salad.
INGREDIENTS:

0.25 cup – BASIL, FRESH
4 EACH – GARLIC, CLOVE
2 tsp – OIL, EXTRA VIRGIN OLIVE
1 tsp – OREGANO, DRIED
0.125 tsp – RED PEPPER, GROUND
1 pound – SHRIMP, RAW
28 ounce – TOMATOES, CND, NO SALT ADDED
 Heat olive oil in non stick skillet on medium high heat. Add minced garlic and cook about a minute. Add tomatoes, 1 tsp dried oregano, and .5 tsp crushed red pepper (or to taste). Bring to boil. Reduce heat to low, cover and simmer 15 minutes. Add shrimp to simmering sauce and cook 2 minutes, until bright pink and cooked through. Remove from heat and stir in basil.
Coaches Meaty Chili
this recipe uses chopped zucchini instead of beans.  It’s great when feeding a crowd – and popular at our Genesis Transformation coach trainings!
INGREDIENTS:

3 pound – BEEF, GROUND, GRASS FED, RAW
0.25 ounce – CHILI POWDER
6 gram – CUMIN, GROUND
3 pound – GROUND TURKEY, SHELTONS
1 pound – ONIONS, RAW, CHOPPED
8 ounce – RED BELL PEPPER, RAW, CHOPPED
42 ounce – TOMATOES, CRUSHED, EDEN ORGANIC
1 pound – ZUCCHINI, INCLUDES SKIN, RAW, CHOPPED
 Saute the chopped onion and bell pepper. Add to crockpot. Brown all the meat, add to the crockpot. Add the jarred crushed tomatoes, seasonings, and small-diced zucchini. Adjust seasonings to taste and stir well. Cook on high about 4 hours or on low all day (or all night, for a next day lunch).
Lime and Cilantro Whole Chicken, Crock Pot
A very simple way to cook a chicken, the lime and cilantro are a great combination to add lots of southwestern flavor. *The ingredients call for .5 cups of cilantro leaves, but you should use the entire sprig as it has more flavor, and requires less work!
INGREDIENTS:

3.5 pound – CHICKEN,BROILERS OR FRYERS,MEAT & SKN,RAW
2 each – CILANTRO, LEAVES, RAW, .25 cup
2 EACH – GARLIC, CLOVE
1 fruit – LIMES,RAW
0.5 tsp – PEPPER, BLACK
 Wash and dry the chicken thoroughly. Reserve the giblets for another use. Cut off excess fat. Season the chicken inside and out with pepper and cumin, or other mexican type seasonings. Place in the cooker breast side up. Squeeze the juice of the lime over the chicken and stuff the rind, cilantro sprigs, and garlic into the cavity. Cover and cook on low until a meat thermometer inserted into the thickest part of the thigh reads 180F degrees,this should take about 6 hours.
