This is all about figs.  I bought a big ‘ol bag of dried figs and we burned right through them.  So good.

Here is a meal all about the FIG.

We eat a lot of salad.  Love it. I brought this dish to the local Baptist church Bible study potluck and people were raving about it – everyone wanted the recipe, it was very well received. I thought for sure I’d have leftovers but the whole thing disappeared.  This salad DOES NOT need dressing – it is awesome just the way it is.  That makes it easier for potlucks and such because it doesn’t get soggy.

If you really need dressing, just drizzle on some olive oil and vinegar.  Like from Genesis Kitchen.

FIG CHOPPED SALAD

Chop up the following (I do it by hand, you can use a food processor):

3 carrots

a head of romaine lettuce, some spinach and mixed greens – whatever you have

5 baby bell peppers

4-6 whole dried figs (cut the stems off before chopping)

Toss it all together – and add anything else you want – but don’t underestimate the joys of simplicity. I mean, this salad works just like this.  I mean it.  Serve some meat on the side, or add cooked leftover chicken to the salad.

And now for some dessert:

FIGGY NEWTONS

preheat oven to 350

2 1/4 cups almond flour

1/2 tsp baking soda

1/2 cup coconut oil (warmed, melted – at this time of year it stays melted on the counter)

1/2 cup raw honey

1 cup chopped figs, about 1/4 inch chop, though you can get all random

1/4 cup chocolate protein powder of choice (if you don’t use the protein powder, increase the almond flour to 2 1/2 cups)

Combine dry ingredients.  Stir together the wet stuff in another bowl, mix wet into dry and form with a tablespoon and press onto PARCHMENT lined baking sheet.  BAKE for 7-10 minutes and allow to cool on the baking sheet about 5 minutes before removing.
