EAT THIS: Summer Fruit Recipes

One of the most glorious parts of summer is all the fresh fruit available.  Apricots, cherries, peaches, berries, watermelon, cantaloupe…and the closer to home you buy your fruit, the fresher it is!  Most every region has it’s seasonal specialties – make sure you’re enjoying the bounty!

A question I am frequently asked is if fresh fruit contains ‘too much sugar’ for fat loss.  My answer is that if you are prone to eating sugar (cake, ice cream, muffins, baked goods, bread etc) then fruit is going to be a step up.  Fruit is unprocessed and loaded with nutrients!  If you have blood sugar issues, then you’re going to want to be more careful.  Keep your fruit eating to the mornings, and/or around a workout so that the glucose is readily used.  Eating protein with your fruit will help stabilize your blood sugar.

Christy’s Grain Free Hot Cereal
.25 cup – unsweetened almond milk
5 grams – sprouted almonds
1 medium apple
.5 cup – fresh blueberries
1 tbsp – flax seeds
.5 scoop GT protein powder
1 tbsp – raw sunflower seeds
YUMMM!! A nice warm grain free alternative to Oatmeal.
In small saucepan with a little water add 1 cut up apple – simmer for 1o-15 min. During the last 5 minutes, add .5 – 1 cup frozen blueberries. While that is cooking in food processor pulse together the rest of the ingredients.

Elegant Ambrosia Fruit Salad
1 lb. – fresh pineapple
22oz. – oranges
1 – large banana, cut into chunks
2 cups – cantaloupe, cut into chunks or balls with a melon baller
.5 cup – fresh mint
1 tsp. – fresh grated ginger
2 oz. – raw walnuts
Description: An elegant alternative to a basic fruit salad.
Cut pineapple, oranges, banana, and cantaloupe. Dump into a large clear serving bowl. Wash the fresh mint, then chop finely in a chiffonade (roll it tightly like a cigar, then chop it so you get thin little strips). Add the fresh mint and ginger, toss with the fruit until well combined. Top the fruit with chopped walnuts. Serve immediately.

Cabbage Fruit Salad Recipe
4 cups – shredded cabbage
2 – oranges, peeled and cut into bite-size pieces
2 – red apples, chopped
1 cup – seedless red grape halves
.5 cup – currants
.5 cup – vegenaise
.25 cup – unsweetened almond milk
1 tbsp. – lemon juice
1 tbsp. – honey
.33 cup – chopped walnuts, toasted
Description: A lovely way to enjoy the colors of the season!
In a large bowl, toss cabbage, oranges, apples, grapes and currants. Cover and refrigerate.
In a small bowl, combine the vegenaise, almond milk, lemon juice and honey; cover and refrigerate. Just before serving, stir dressing and walnuts into salad.

Fresh Blueberry Pie
1 cup – raw almonds
2 tbsp – arrowroot (flour)
3 pints – fresh blueberries
.25 tsp – ground cinnamon
9 – medjool pitted dates
.25 cup – water
2 tbsp – fresh squeezed orange juice
2 tbsp – fresh lemon juice
2 cups – raw walnuts
.5 cup – xylitol
A delicious grain free pie recipe! You can substitute any fresh berries. Fresh huckleberries are my personal favorite.
Soak walnuts, almonds and dates overnight in water. To make crust,use S blade on your food processor, put dates and nuts in food processor, add the orange juice, and mix until you end up with a sticky ball of dough. Grease a 10 inch pie plate with olive oil. Press the crust in as best you can. Combine blueberries, arrowroot (mixed in .25cup warm water), cinnamon, lemon juice, and xylitol and mix well. Place mixture in crust. Transfer pie to the refrigerator to chill until firm, about 30min. Bake at 350 degrees for 40 to 50 minutes or until juices are bubbling. Let cool before serving.

Steak with Mixed Fruit Salsa
1 cup – chopped peeled peaches
1 cup – fresh blueberries
1 – avocado, peeled and chopped
1 – red ripe tomato, chopped
2 tbsp. – extra-virgin olive oil
2 tbsp. – lime juice
1 tsp. – honey
1- jalapeno pepper, minced
4 – 8oz. ribeye steaks
.5 tsp. – black pepper
Description: An elegant yet very easy recipe perfect for a summer cookout.
In medium bowl, combine peaches, blueberries, avocado, and tomato; mix gently. In small bowl, combine oil, lime juice, honey, jalapeno, and pepper; mix well. Pour over fruit mixture; toss and refrigerate.
Prepare and preheat grill. Sprinkle steaks with pepper. Grill steaks as desired, about 8-9 minutes, turning once, for medium rare, 140 degrees F. Remove from grill, cover, and let stand 5 minutes. Top with fruit mixture and serve. Serves 4.

Strawberry Almond Salad
3 cups – fresh baby spinach
.5 cup – sliced fresh strawberries
.25 cup – raw almonds, toasted and chopped
1 tbsp – apple cider vinegar
1.33 tbsp. – honey
Description: A beautiful and delicious salad!
In a large bowl, combine the spinach, strawberries and almonds. In a jar with a tight-fitting lid, combine the apple cider vinegar and honey; shake well. Drizzle over salad and toss to coat. Serve immediately.
