what I’m snacking on lately.

A snack should be quick, easy, tasty, nutritious and guilt free…these are my personal recent favorites:

GT Candy

one date.  one walnut.  stuff the walnut into the date.  Savor it.  (I like medjool dates because they’re meaty and moist.  Be sure and pit your date by slicing lengthwise one one side.)

Apple Pie in a Bowl

Layer in a bowl (do not mix!): 1 cup unsweetened applesauce, a generous sprinkle of cinnamon, and top with 2 TBS freshly ground flaxseed.  (Pour on top: a half scoop vanilla protien powder in about 3 oz of water, OR fresh hemp milk.  Yum.)  This has to be eaten immediately, or the flax gets soggy.

Blueberry Ice Cream

Jamie introduced Team Genesis to this delight at a weekend team retreat in Hot Springs, MT

Pour 1 cup frozen blueberries into a bowl.  Top with 1 scoop good-tasting vanilla protein powder.  Add enough water to just dissolve the protein powder, mixing in with the blueberries.  Let sit about 10 minutes – the blueberries will soften and the protein will freeze…stir and eat.
