Cameron Cooks In Chaos: Mexican Spagetti

In this house, we LOVE LOVE LOVE ethnic food – especially Mexican anything: tacos, burritos, oatmeal (seriously), whatever.  We like it spicy – we use lots of mexican seasoning, taco seasoning, chile powder, chipotle tabasco, Cholula, all of those.  The upside is that it’s easy cooking.

I made this dish one night and the kids LOVE IT, so now I make it once a week or so.  If I forgot to put something in the crockpot this is my go-to.  It’s great for Wiggly Wednesdays, or a friday night quick meal.

MEXICAN SPAGETTI

2 lbs ground meat – brown this in a skillet along with 3 TBS no salt taco seasoning (we get it at a local health food store in bulk)

Add in a 4 oz can of chopped green chiles

Cook your noodles of choice, or use spagetti squash (baked, not boiled…duh…)

Then all you do is serve the noodles with the meat on top, and whatever you want on it, we like chopped tomatoes, onions, lettuce, avocado or guacamole, salsa, hot sauce – just like you would with tacos.  The kids love the fun of the noodles, and they like it because they get to put whatever they want from the table on it.  Just put all the condiments in the middle of the table and let the kids have a good time.

It’s helpful to me to take 8 lbs of ground beef, brown it up with taco seasoning and put it in the freezer in ziplock bags (so make 4 of them for a 2lb meal).  It’s already cooked, just has to thaw – and all you do is heat and serve for real sturdy, healthy FAST FOOD.
