Cameron is our new family-oriented blog columnist. Married with 5 young children, she attends to a busy church-centered social life that focuses on supporting community youth. As with all busy moms, she struggles with maintaining healthy eating in her household and will be sharing her original and adapted family meal recipes here on a weekly basis.
Cameron loves her coffee. She also loves to play with healthy goodies to go into her coffee. Here, she shares her latest concoction in time for the holidays:
CAMERON’S CHRISTMAS CREAMER
makes about 1.5 to 2 cups
1 can regular (not lite) coconut milk (organic preferred)
2 TBS EACH raw honey and real maple syrup
1/2 tsp EACH peppermint extract and vanilla extract (adjust to taste)
2 TBS cocoa powder or raw cacao powder (adjust to taste)
Place all ingredients in blender or bowl; blend on low OR whisk until thoroughly combined. Store in a jar in the refrigerator. Add 1 or 2 TBS to a hot cup of coffee and relax!
**can replace peppermint extract with 1 tsp cinnamon for a different flavor
