Turkey Meatloaf

A good meatloaf serves several great functions – it’s easy, it’s comforting and delicious, and it makes great leftovers. As a leftover, I like to slice it and heat it on the stove alongside some sliced baked sweet potatoes. Unusually enough, I really like it for breakfast.

Here’s our recipe:Classic Meat Loaf

1.5 lb ground turkey

.5 cup celery, diced

2 whole eggs

1 clove garlic, minced

.5 cup chopped red bell pepper

.75 c diced onions

salt free seasoning to taste

Combine everything in a large bowl, add seasonings of choice, and mix with clean hands.  Place in a loaf pan, or form onto a cookie sheet or casserole pan, lightly oiled.  Bake at 350 degrees for about 50 minutes, until juices run clear.  Remove from oven and allow to sit for 10 minutes before slicing.

Serve with baked sweet potatoes, or baked winter squash – steamed green beans and salad.
